Chicken Taco Lettuce Wraps

If you want to a good vegetarian alternative just switch out Chick peas instead of chicken.
*makes ~8 lettuce wraps

Cooking ingredients
-1 package of ground chicken
-1/2 diced green pepper
-1/2 diced red pepper
-1/4 diced red onion
-3 cloves of garlic minced
-2 tbsp tomato sauce
-2 tbsp chilli powder
-1 tbsp cumin
-lots of fresh ground pepper
-1 tbsp of sea salt
-1/2 cup of cooked brown rice (optional)

-diced tomatoes
-jalapeno cheddar or regular cheddar

Served in
-butter lettuce leaves

Cook the ground chicken in a pan on medium heat with salt and pepper. When the chicken is half way cooked add in peppers, garlic, onion, seasonings and tomato sauce. Cook until chicken is no longer pink and veggies have gotten a bit tender. *Optional mix in rice near the end

Serve in butter lettuce leaves topped with diced tomatoes, avocado and jalapeno cheddar.
