Coconut Mango Chicken Stir fry

(3 servings)
– 2 chicken breasts cut into chunks
– 2 carrots sliced
– 1 small head of broccoli crowns
– 1/2 a red pepper chopped
– 1/2 a zucchini chopped
– 3 cloves of garlic
– 1 mango diced
– 3 tbsp chopped cilantro
– salt and pepper to taste
– 1 cup of organic canned coconut milk (use low fat if desired and I recommend organic due to the ingredients)
– 1 tsp of coconut oil for cooking
– 2 cups of cooked brown rice

Heat a large pan with coconut oil and add the chicken. When the chicken is half way cooked add in the carrots. A few minutes later add in the rest of the veggies and mango. Once the chicken is cooked through add in coconut milk and cilantro. Simmer for about 15 more minutes. Serve with rice.
