Mango BBQ Chicken Thighs with Steamed Coconut Veggies

(Recipe is for One Serving)

-2 chicken thighs
-Desired amount of BBQ sauce
-1 Mango diced
-1/2 cup of broccoli
-1/2 cup of cauliflower
-2 carrots chopped
-2 cloves of sliced garlic
– Pepper
-1 tbsp of coconut oil

-Preheat oven to 400 degrees F, meanwhile coat chicken thighs in BBQ sauce, diced mango and pepper (can marinate ahead of time). Place chicken on a baking sheet and bake for about 30 minutes or until no longer pink.
-Use a steamer to steam vegetables with coconut oil, garlic, pepper and oregano. Steam until desired tenderness.
